Arugula Zimmunity Pasta Salad

Ingredients:

  • 2tsp Youndu
  • 3 tbsp of shelled hemp seed
  • 1tsp lemon juice
  • 8 oz of Zimmunity pasta
  • 0.5 C Red Onion Thinly sliced
  • 2 C Arugula
  • 0.5 cherry tomatoes halved
  • Fresh Dill
  • Lemon Zest
  • Fresh crushed pepper

Instructions:

  1. Cook the Zimmunity pasta according to package instructions
  2. Meanwhile, Mix Youndu & lemon juice in a bowl and set aside
  3. Once cooked & cooled, put the pasta in a larger bowl
  4. Add the red onion, arugula, hemp seed, cherry tomatoes & vinaigrette to the pasta and toss gently
  5. Serve immediately, garnishing with lemon zest, fresh crushed pepper and fresh dill to taste.
