Penne Arrabiata

  

 Servings: 2      Prep Time: 5 minutes    Cook Time: 20 minutes

Ingredients

  • 1 Box Bentilia Red lentil Penne pasta
  • 5 Tablespoons olive oil
  • 1-2 cloves garlic
  • ¾ cups fresh chopped tomatoes
  • 1 tablespoon tomato paste
  • 3 fresh basil leaves, chopped
  • ¼ cup parmesan cheese
  • 2 tablespoons flat-leaf parsley finely chopped

Instructions

Pasta:

  1. Bring 3 cups of salted water to a boil and cook red lentil Penne pasta for 7-8 minutes as you would your regular pasta;
  2. Rinse & drain

Arrabiata sauce:

  1. Add oil, garlic, and crushed red pepper to a skillet over medium heat and cook for 30 seconds;
  2. Add the whole tomatoes, tomato paste, and simmer for 10 minutes before removing from heat and adding the fresh basil;
  3. Add pasta & parmesan;
  4. Top with Parsley;
  5. Toss & Enjoy!
