Lemon Garlic Mac & 'Cheez'

Ingredients:
- Bentilia - Green Lentil Elbow Macaroni
- Cheez Sauce1 1/2 CUP cashews (option for creaminess: soak for at least one hour no more than 24 hrs)
- 1 Daily probiotic capsule or substitute 1-2 TABLESPOONS of plain almond/coconut or oat yogurt
- 1 TEASPOON of Himalayan pink salt
- 1 LB large green lentil elbow pasta
- 1/3 CUP of hemp seed or avocado oil ( Sub with 1 1/2 CUP of vegetable broth)
- 3 garlic cloves
- 1/2 TEASPOON of fresh turmeric root or turmeric powder
- 2 TEASPOON of mustard powder
- 1/4 CUP of nutritional yeast
- 1 TEASPOON potato or cornstarch
- Cheez Sauze
- 1 1/2 CUP cashews (option for creaminess: soak for at least one hour no more than 24 hrs)

- 2 TEASPOON of mustard powder
- 1/4 CUP of nutritional yeast
- 1 TEASPOON potato or cornstarch
Instructions:
- The first half of this recipe can be made on its own and used as a vegan cream cheese.
- Blend soaked cashews by adding about 1/2 cup of vegetable broth. Keep mix thick and creamy.
- Scoop into a bowl.
- Stir in probiotic or yogurt, salt and lemon squeeze to taste.
- Cover for at least 2hrs no more than 24hrs on the kitchen counter in a warm but not hot space.
- Boil Bentilia elbow macaroni and begin preparing the rest of the Cheez sauce while you wait:
- Zest or microplane 3 garlic cloves.
- Pour just about 1/4 cup of your vegetable broth in to a sauce pan on medium low heat.
- When the broth is hot gradually stir in turmeric, mustard powder, about 2 of the zested garlic, nutritional yeast and add just enough broth to keep mix from being too runny and reserve the rest
- Allow the mixture heat fully then remove from heat.
- Stir in starch
- Remove Elbows from water and drain
- Add your cooled garlic mix to your blended cashews and adjust texture with the remaining reserve broth available.
- Spoon and fold cheez onto pasta and enjoy.
- For a hearty Mac & Cheez add marinated kale, steamed zucchini or blanched and chopped broccoli
